Soaking Rig

  Many dried foods, like seaweed or mushrooms, require soaking before you can use them in recipes.  The problem is figuring out how to keep something submerged that naturally wants to float.  This soaking rig has worked the best for me.

  First, you need a roasting pan and a baking sheet that are around the same size but can nest into each other. 

•  Place your items to be soaked in the roasting pan.

•  Place the baking sheet over the roasting pan.

•  Weigh the baking sheet down with a can of food or something similar.

•  Slide the baking sheet over to the edge of the roasting pan and pour your water in.  Try to fill the pan as full as possible so your dried items are completely submerged.
